Vegan Orange Cherry Muffins

No, I'm not vegan, not even close but I do love these delicious Vegan Orange Cherry Muffins! They are so fluffy and moist that they taste like a treat without the added guilt! And hey, If you are vegan, then I just made your day!

I remember this one time, I thought about going vegan but then I remembered how much I love eggs, cheese and meat. HA! In all reality, I'm not one to follow any specific diet but I do believe in living a healthy, balanced life style. You will see me sharing some of my favorite healthier recipes on this blog. They will often be very kid-friendly too, seeing as I am always cooking for 3 tiny humans that are my children. Well, only 1 is tiny now, the other two are growing teenage boys. I'm going to add a Disclaimer here, most of the recipes that I will share will NOT be original recipes. I'm a terrible cook. I hate to cook. And when it comes to the kitchen, I have very few original ideas. So, the recipes I choose to share will be ones that I've obtained from somewhere else, tried and loved.

Vegan Orange Cherry Muffins


Ingredients

  • 1 1/2 cups All Purpose Gluten-Free Flour (sifted)

  • 1/2 cup Almond flour (sifted)

  • 2 tsp baking powder (gluten free)

  • 1/2 cup chopped, raw walnuts

  • 1 tsp sea salt

  • 1/4 cup extra-virgin coconut oil

  • 2 TBSP All natural peanut butter

  • 3/4 cup Pure Maple Syrup

  • 1 TBSP Finely grated orange peel (orange zest)

  • 3/4 cup fresh orange juice (appox. 1-2 medium oranges)

  • 2 tsp ground flaxseed

  • 1 cup thickly sliced banana, very ripe (approx. 1 large banana)

  • 1 tsp pure vanilla extract

  • 1/2 cup fresh chopped cherries

Directions

  1. Preheat oven to 375

  2. Prepare 12 muffin cups with liners and lightly spray with oil

  3. Combine flour, almond flour, baking powder, walnuts and salt in large mixing bowl; mix well, set aside.

  4. Place oil, peanut butter, maple syrup, orange peel, orange juice, ground flaxseed, banana and extract in blender, cover; blend until smooth- approx, 30 seconds.

  5. Add peanut butter mixture to flour mixture; Mix until just moistened. Do not over mix.

  6. Add cherries. Fold until just mixed.

  7. Spoon mixture into muffin tins. About 1/4 cup should fill each cup about 3/4 full.

  8. Bake 18-20 minutes or until tops are golden brown and toothpick inserted comes out clean.

  9. Remove from oven. Allow to cool for before removing muffins from pan and cooling completely on rack. Enjoy!
